This is a southwestern inspired quinoa and black bean chili. I adapted the recipe for ingredients on hand and added a generous pinch of red pepper with a good dose of lemon juice for the much needed fire and zest! Garnish with cut green onions, and serve! Check out the original recipe for starters.
